I ran one ball of dough through the machine and I was done. No metal shavings, no grease, no discolored parts. I have only had my machine for 5 years now. Many of the reviews citing problems with this device are older than that, so perhaps the manufacturer listened to the complaints of those who purchased their machines longer ago and who had problems. A success story for quality control and buyer feedback??
A couple of tips. I thought that a low speed setting for the mixer would be most appropriate. Bad idea. I find that the best speed settings for the roller and slicing attachments are 3 or 4. If you go slower, you get a less regular texture. Too much quicker and the dough tears.
Not documented in the booklet that comes with the device is that you can widen the rollers a bit extra if you go clockwise a bit past 1. This is where I start my rolling. I usually put the ball of dough through this setting 2-3 times, folding it in half before each re-roll.
I then narrow the rollers 2 notches for each subsequent rolling until the desired thickness is achieved. I use the following settings for different types of pasta:
Ravioli - 4
Linguini - 6
Fetuccini - 5
'Broken Noodles' - 5
You can go thinner for things like angel hair pasta, but I usually prefer heartier pastas which Tuscan-inspired sauces.
Take note - if you are making pasta for a group larger than 3-4, or are otherwise not planning on taking it directly from the roller to boiling water, you will need a good pasta rack/dryer unless you have acres of counter space. If you attempt to accumulate your pasta in a 'pile' before cooking, you get a big blob of pasta-ish dough and you will need to completely re-roll it. Laying the pasta in a flat, single layer, is an option but I do not have that much counter space. I therefore use a pasta dryer to hang the pasta for a few minutes to a couple of hours until I am ready to boil it.
Updated June 3, 2009 - We have been using this now for just shy of 5 years and it still works very well. The device has been easy to maintain, there has been no build up of gunk even though you cannot wash it in soap and water, and the rollers are still spinning evenly despite semi-regular use.

These work better for cookie mixing then the wire wisks. We had these for about 6 months only used maybe 12 times and they broke. Hopefully this time they will last a bit longer. Aside from the longevity, they work fantastic.

The product was used when it claimed to be new. When I returned it, they said they never received it and I accidentally forgot to get the tracking number. Now I am without my money or the gross used meat grinder. I am so annoyed by this that I do not think I will purchase from Amazon again. The one star is because I cannot give 0.

and am just waiting to cook the noodles for dinner. While I have the KPEX set, this fettuccine cutter is one of the cutters in the set and it worked perfectly! I had never made pasta with my KitchenAid and this was the very first stab at it. I just got my new toys 2 days ago. It took me MAYBE an hour to mix the dough (semolina) roll and cut. It may have been even less time because I wasn't timing myself, but there's no doubt it will be faster on the next go around because I was reading the wrong recipe from the book, ARGGGGGGGH! and had to spend more time fixing my error....but once the dough was the correct recipe, everything was a BREEZE. Easy, easy, easy. I can't wait to taste it. Homemade Fettuccine Alfredo for dinner! Mmmmmmmm.
The rolling of the dough is FUN. The cutting of the dough was FAST. The one thing I think I did wrong was I had floured and folded my sheets and let them sit while I rolled the entire batch of dough and 2 of the sheets stuck together and it was difficult getting them apart....but I DID. Just make sure to use plenty of flour on your sheets or roll, cut, roll, cut....which I think would be a pain because you would have to change attachments every 5 seconds. The next time I do this I will probably cut my sheets to the length I need (instead of folding), flour and stack the cut sheets until I cut them. OR, if you have the room, just lay all the rolled sheets out flat and do not fold them or stack them.
I LOVE these attachments! I've had my KA mixer for 15 years and these have got to be my favorite attachments. If you're thinking about this set, don't hesitate. I highly recommend them! I bought my KPEX set (which is the roller, ALL the pasta cutters AND the ravioli maker) from an online kitchen supply place for $45.00 less than KA or any other place is selling it for. Amazon doesn't sell that set. Google "Katom" and you'll find the complete set, if you're interested. :) Happy pasta making!

I've been happy with many other KitchenAid products, but this one is pure junk. The pasta roller attachment that KitchenAid also offers is great, but the width of it is so close to the size of this ravioli press, that the edges of the ravioli barely have enough dough to seal - and many of them pop open.
It's worth noting that although this does in fact attach to a standing mixer, it does not use the mixer's motor. You have to manually turn the crank with your hand.
I returned this piece of junk, and bought the VillaWare V5500 10-Square Ravioli Maker for $18. Save yourself some money and do the same.
