V5400-01 Ravioli Maker- 12 with pin Review

1. Use corn starch, not flour, to keep the pasta dough from clinging to the mold. I put corn starch in a powdered-sugar-type shaker/dredger, and I give the first sheet of dough a good sifting on one side. Then I flip that over so the cornstarched side is facing down, against the ravoli form. After I put the second sheet over the filling, I dust the top with more cornstarch before rolling -- that way it wont stick to the rolling pin either, and when I invert the mold over a parchment-lined cookie sheet, the raviloi won't stick to the parchement paper. Note that you want to avoid getting cornstarch BETWEEN the two layers of pasta, as it will inhibit their sealing together.
2. Get a small (#40 or a higher number) disher (a thumb- or squeeze-lever ice cream scoop) for putting filling on the pasta. It will save you tons of time and all your ravioli will come out the same fatness. An added bonus is that you can calculate in advance how many ravioli you will get out of a given amount of filling: a #40 disher gives you 40 scoops per quart.

Pierogi Maker - Made in USA Review

Pierogi Maker - Made in USA

I purchased this Pierogi maker to try to and make some delicate Thai steamed fish dumplings from Charmaine Solomons' Thai Cookbook (page 22). The dumplings in this book have a rope-like edge that makes them very attractive. I have tried them with the pleated edge dumpling presses but this makes the outer edge too thick and spoils the texture of the finished product. I thought this product with its narrow edge might be a good alternative, how wrong I was. To start with the instructions are on a 4" scrap of photocopied paper, not very professional. They explain that you need to use a "shaping form" to make the depressions to put the filling in. There is no "shaping form" or worse still no information on where to get one and this product is unusable without one. I have attempted to use this product by making the depressions with other kitchen items but this does not work well so I have added this to the "tried & useless" kitchen gadget cupboard.

The easiest way to cut and seal Polish pierogies, Chinese pot stickers, filled tarts, etc. Extra heavy construction. Stays rigid under the weight of rolling pin for positive sealing.

Antique Gadgets Ravioli/Tart Maker Review

Antique Gadgets Ravioli/Tart Maker

I purchased this a few weeks ago, and have only used it once. At the same time, I found and purchased the Ursula Tartmaster from Kitchen Supply in Illinois. I recently used both to make ravioli.

The process is simple:
1. make a sheet of dough,
2. spoon filling onto the dough,
3. either fold the dough over the top of the filling, or place a second sheet of dough on top of the filling.
4. position ravioli maker, press spring loaded crimper on the top, and the crimping edge depresses and will seal the two layers of dough with a crimp.
5. release crimper and press down on press, the outer housing then cuts the sealed ravioli out of the sheet of dough. Lift finished ravioli and cook.
The antique gadgets ravioli/tart maker did those things adequately, but not great. I made about 6 ravioli with this press and about 20 with the tartmaster.
Pros: does job as advertised.
Cons: 1. with minimal pressure both the bell-shaped housing of the crimper and the stem to depress the crimper BENT! After 6 ravioli! My husband noticed it when inspecting the device as he came to investigate my operation. I was using normal pressure. My husband easily bent the unit straight by hand. Does not bode well for longevity.
2. the crimp did not seem sufficient, the crimping teeth quite shallow and smooth; having said that, it must have been adequate, since none of my ravioli came apart in the boil. The crimp is far cleaner and better defined with the ursula tartmaster, which has more square and deeper teeth.
The feel of the tartmaster was much more stable, I naturally gravitated to using it in preference to the antique gadgets device. The quality and ease with which the tartmaster made ravioli was far superior, and it is constructed with a durable frame on the crimper which should withstand decades of regular use. The tartmaster is more expensive, I paid $10 locally at a specialty shop for mine. It is also more difficult to find, since kitchen supply is wholesale only. Pampered chef originally collaborated with then stole Ursula Kaiser's tartmaster design and manufactures something similar with their name on it. There is an ongoing court battle about this. I had stopped buying pampered chef products several years ago do to their high prices. The quality of their things is good, but not for what they charge. I also have ethical difficulty supporting pyramid schemes. Now that I have learned that pampered chef will steal peoples ideas (Ursula's is evidently not the first time pampered chef has done this) I feel even less compelled to support pampered chef. I do not know what the pampered chef device is like, though it may be easier to acquire than Ursula's tartmaster.
Summary: the antique gadgets device will do the job, but better things are out there.

VillaWare V5500 10-Square Ravioli Maker Review

This is a great product if you already have a pasta machine. I've made Italian ravioli and Asian-style won-ton with it. It's a lot of fun and, of course, nothing beats homemade. The mold is very heavy and the holes are just the right size for filling. It's been through the dishwasher several times with no problems (though you can easily just wipe it with a cloth if you didn't get any filling on it).
My only complaint is that once you have put the ravioli together and are rolling over the top pasta sheet to cut them, you have to press down fairly hard to indent them so they come apart easily without ripping. The raised zig-zag could be a bit pointier than it is (I don't mean sharp) to cut the pasta easier. As it is, the zig-zag is somewhat rounded. By pressing so hard (which is probably necessary to seal the pasta completely), the bottom layer sticks to the mold, causing the ravioli to split when you try and get it out.
After making several batches, I've found out how to overcome the problem. Make sure you rub just a hint of oil onto the mold. This keeps them from sticking and hence ripping, allowing you to pull them apart along the zigzags more easily.

V177-25 AL DENTE Ravioli Attachment Review

Although I was quite happy with the roller with which this is used, the ravioli attachment was a major headache to use, and ended up producing poor ravioli, even after hours of messing with it. The machine seems simple on its face, but everything I tried still ended up making sad, flat little ravioli with almost nothing inside. I would still definitely use the Al Dente roller to make sheets of pasta, but would use a ravioli stamp at that point instead.

KitchenAid KRAV Ravioli Maker Attachment Review

I've been happy with many other KitchenAid products, but this one is pure junk. The pasta roller attachment that KitchenAid also offers is great, but the width of it is so close to the size of this ravioli press, that the edges of the ravioli barely have enough dough to seal - and many of them pop open.
It's worth noting that although this does in fact attach to a standing mixer, it does not use the mixer's motor. You have to manually turn the crank with your hand.
I returned this piece of junk, and bought the VillaWare V5500 10-Square Ravioli Maker for $18. Save yourself some money and do the same.

I recently had gotten a Villaware Pasta set for my birthday. One of the main reasons was the ravioli press. What a disaster that was. then I thought hmm, I'll try this. what a delight. I made up about 130 ravioli yesterday. It works great. I would like to mention to make sure you liberally flour it before laying on the dough so they pop out quick. It took for a few roll outs to discover this. I highly recommend this product, it is a gem.
