This works very well under extremely limited conditions. I found that in an entire 10 pound sack of standard Russett potatoes, not one would fit the machine without prior cutting to fit the machine.
It is not only the potato length (3.5 inch max), but the height (2.25 inch max).
Therefore the use of this is a marginal improvement in time to just getting out the chef's knife.
Also, there can be considerable waste in cutting a potato to make 3.5 inch length fries if you are not willing to make 1.5 inch micro-fries with the leftovers.

My first mandoline was the Bron which is visually the most serious/macho/cool of the bunch, but its shortcomings were unacceptable - the slicing blade is one-piece stainless, and can't hold a sharp edge; the julienne blades are not sharp and can't be sharpened; and the safety carriage is designed to not go past the cutting edge. I sold it.
I now have a Matfer (the all-stainless model) and it has a 2-piece slicing blade: the cutting edge is high-carbon steel (which can be sharpened and hold its edge) welded to a stainless part. The julienne blades are very sharp (altho can't be resharpened). The safety-gadget thing works well, but can't be used for waffle cuts. I use the Matfer only for waffle cuts and if I have large quantities of slicing. If you want french fry size potatoes or are slicing celeriac, you're better off with a sharp knife. The disadvantage of this machine is that you can't adjust the slicing blade's uniformity of thickness - my slices are thicker on one side (the Bron had more adjustment leeway).
The machine I use the most is the Benriner - the slicing blade is very sharp and is sharpenable. The (unsharpenable) julienne blades are extremely sharp. It can't do waffle cuts and is not good for massive quantities of large cuts. It's best for finer julienne and thin slicing such as potatoes, cucumber or daikon.
Don't even consider using these machines without the safety gadget.
Unless I have a large quantity of slicing to do, I'd opt for a sharp knife, because cleanup time counts too.

Note: I originally wrote the above review in Nov. 2001, based on the then-current Matfer model 44595. Judging from the photo of the current model 215000, it appears that the slicing blade is now one-piece stainless steel instead of carbon welded to stainless. "... you can sharpen the knives and correct the play of the blades for more precise cuts" refers to the slicing/waffle blade, not the julienne. The julienne blades are not sharpenable.

While the cost might be high, the quality and materials used are fantastic. Everything is made to last and the Shun blades are razor sharp. This is an excellent slicer. I've used everything in it from carrots (when making my carrot version of thai papaya salad) julienned into matchstick thickness to wide thin slices of Korean radish. Never failed me.
Two drawbacks though:
1. The safety guard is a joke. It doesn't hold the veggies very well and is a pain to use effectively...which means I usually don't use it. I've cut my fingers on this mandolin twice now, which isn't bad for two years of regular useage, but I don't like the sight of blood so I'll leave it as a major detractor. Luckily for me, I cut myself on the julienne part and not the actual wide slicer. In other words, my finger meat was left shredded but intact. Whew!
2. The metal parts rust. Yep. They rust. Hence the reason I am now shopping around for another slicer. Don't know yet if I'll get another Benriner. Might look into the Bohn.
***Update***
Apparently Benriner realized the metal parts rusted because their mandolins now come with plastic screws to hold the julienne blades in place and to adjust the thickness level.

I purchased the V-Slicer over ten years ago and it has been a faithful companion in the kitchen. The speed with which it slices/dices onions makes it more than worth the price. You can make french fries or julienne fries, onion rings, scalloped potatoes, carrot or celery sticks...the list is endless! Cleanup is no more than a rinse under water. The safety holder ensures that you won't be suffering any mishaps. But for safety's sake, keep this appliance away from the kids. The blades are VERY SHARP and can deliver a nasty cut if you don't handle them carefully. For that reason, I never wash them in the sink where suds can hide them and risk injury. But these warnings aside, this is a wonderful and versatile tool. It is as useful as a mandoline at a fraction of the price. You will reach for it often and the V-Slicer will be one of your favorite and most used kitchen tools.

This was the slicer we were hoping someone would make. After using this, we've thrown away both the wooden box and the plastic slicer we've used.
The construction is durable, with the heft of solid maple giving a feel of quality as well as real beauty. Once we got a coat of mineral oil on it, the grain came alive and was even more beautiful. The stainless steel is sturdy and polished to a mirror finish with no sharp edges at all. They guide the knife nicely - and you don't end up with any plastic shavings in your bread that so often accompanied our previous products. The cut is straight, although a long knife is required as with any other slicer. Its function is rivaled only with its aesthetic quality. We always felt the plastic cutting guides looked so cheap and cheesy that we had to hide them in the cupboard. We leave this one counter with pride.
This slicer is the best thing since...well...home-baked bread.
