My favorite cookbooks are "The Professional Chef" by the Culinary Institute of America and "Culinary Artistry". If you love to cook and entertain, this is a great item to have in your arsenal, I love mine.
After I read the book "Amuse Bouche" I knew that I needed one of these little gadgets to add to my collection. When I received this I was pleasantly surprised to find that it had more applications than I knew about.
You can use this device to make an espuma, gourmet sauces or flavored cream in a flash. An espuma is a foam prepared from a puree, coulis, cream, or juice. If you are trying to cut back on the fat this tool can be a big help. I like the Pineapple Espuma that is pineapple juice thickened with gelatin and a little powdered sugar. It makes a nice light treat that I use as a bed for mango chunks. Now fruit for dessert doesn't seem so much like deprivation.
You can also take a warm strained sauce and foam that. The booklet that comes with the device has recipes for a Curry Sauce and for Hollandaise. Any strained sauce would work. To keep the sauce warm you place the whipper in a 165-degree bain-marie.
If you want a decadent treat to top your coffee try this one. Heavy cream, a little powdered sugar and some caramel syrup. We did this one night and everyone raved.
For really fluffy chocolate mousse put the prepared mousse in this and see what happens. You get the fluffiest chocolate mousse you have ever put in your mouth.
If you are trying to reduce the additives and preservatives that your family consumes this makes a wonderful plain whipped cream. My husband likes it when I add cocoa powder and make him chocolate whipped cream.
If you are one of those people that love a good kitchen gadget give this one a try. I have really enjoyed playing with it. Just by adding a little "gas" to my cooking suddenly everyone thinks that I am a culinary genius.

Rival PP25 Popcorn Popper, White Review

(More customer reviews)Though visually appealing, it is the worst engineering design ever -- there is no chute for the popcorn to be guided into a bowl. I agree with other writers -- popcorn and hot kernels everywhere, which pop wherever they land and have a bland taste. TONS of unpopped kernels in the bottom of the bowl, with a burned scorch to them. The Rival seems to be a truly dangerous design, and it's hard to believe they haven't voluntarily or involuntarily recalled it. Over the years, I have had much better experience with Presto and want to return to Presto, even though it is a less visually appealing design -- OK if you like 70s retro, though!

after you take your food off. use the rubber spatula provided and get as much off as you can.
Unplug...then soak paper towels and place them in the grill and close and let sit for a half hour...take off...wipe down...then plug back in to let the rest of the settled grime lift off...do not use soap..just use the rubber spatula again and get the rest off...always use towels or...purchase his own scrubbing sponges. I have those but knock wood,,,don't need them yet...

(More customer reviews)This Coleman drip coffeemaker is the ultimate indulgence for those who love to make coffee outdoors. Why sacrifice the quality of your coffee on a camping trip? If you love camping and you love coffee, get this maker...forget any other method (unless, of course, you absolutely don't have the room such as when backpacking or you have electric available at your campsite).
This appliance looks to be made by Mr Coffee for Coleman because Mr Coffee carafes do fit (I've since learned the corporation that owns Coleman owns Mr Coffee). The machine uses round basket paper filters, and it's somewhat slower than a home unit, but it will make up to ten cups. One caution here: be sure to keep the handle on the carafe pointing straight out the front when brewing; if it's hanging out toward the side, the handle will get hot and it could melt if your burner is turned way up.
I've also used this coffeemaker on a gas range during a power outage and it worked just fine.

(More customer reviews)We bought this grill to replace our old GF grill that was about 10 years old. We use this several times a week, and I really miss the old grill.
This does cook meat really quickly, but it lacks a timer and a temperature option that our old GF grill did have. It will burn meat very quickly and puts out a lot of smoke b/c it cooks too fast. This is the only jumbo size, so I guess it will have to do for now. If a timer and temp option were on here, it would make a big difference.

(More customer reviews)This little device is almost perfect. It's fun to use, and you control the size of chopped garlic you need. (If you're a serious chef and can mince garlic behind your back with your eyes shut, you probably don't need this device.)
The minor drawback is the clean up. There are two components to this little zoom; the garlic compartment and the rotating blade. You need to be careful not to hurt yourself when separating the two and removing your garlic. But, if you're patient in the kitchen (and not accident prone), that shouldn't be a problem. The grilling surface, while not huge, is quite large enough for a couple of good-sized steaks or several hamburgers or chicken pieces. It heats up quickly and cooks evenly and efficiently and I've found clean-up to be a breeze. At first I dismissed the little plastic spatulas as silly and useless but I found that they're the perfect size and shape for gently scraping the plates to loosen any food residue before swiping them with a damp paper towel or sponge.
This is one product that works as advertised and I highly recommend it.

16 inch Traditional Cast Iron Wok (incl. ring) Review

(More customer reviews)Hi. I read the previous review and just wanted to put in a correction and a FYI so people don't think these cast iron cooking utensils are defective. I cook alot with cast iron and have bought new cast iron cookware from the US and China. When a cast iron cooking vessel is brand new and hasn't been "seasoned" by the manufacturer (like Lodge does for some of their skillets and such), it is covered with a thin film of machine oil to prevent rust and corrosion in transit. This is what needs to be washed off before use. Non-seasoned cast iron is a very gray color- indeed, almost looking painted gray if you're expecting it to look black. It will not develop the black patina until you start cooking with it. It is essentially baked on oil that turns the iron black. The best way is to season your new pan is to coat the whole (dry) pan inside and out with vegetable oil and put it in the oven to bake. A very thorough explanation of the seasoning process is given at the Lodge Manufacturing website: www.lodgemfg.com When you're done cooking with your cast iron, scrub it out with hot water only, and then put it on the stove-top to dry. Re-apply a bit of oil as needed. Iron rusts without this protection to moisture from washing or in the air. Cast iron does take a bit of maintenance, but is a superior and very safe cooking surface. (More customer reviews)I own many of these products and they are great. I was dissapointed, the first one had paint chips and I ordered a new one, then the second one did as well and I just decided to keep it. Other than that, this is an excellent product.
One word of advice, use a soft cloth to clean and do it when it is hot. I had to replace two of these because I used a plastic scrubby thing and the non-stick surface began to bubble and peel.

(More customer reviews)I had lusted after this little baby for some time and finally bought it when I found a great deal on it. It makes the most amazing sandwiches, which you can custom-tailor to your tastes. I also used it for a rolled flank steak, stuffed with mushrooms and cut into thick slices. Each slice cooked perfectly at medium heat, although like all steaks, it requires a watchful eye to prevent overcooking.
My experience with vegetables was similarly good. Peppers, onions, eggplant slices all cook in minutes with good result. I have not tried chicken breasts, but from reading the other reviews, imagine that the results will be similar.
One negative: fish can be a tricky business on this grill. I cooked an ahi steak for only a few minutes and it was overdone. I bought a stovetop grill pan specifically for fish after that (well, I confess I do throw a little bacon on it too from time to time).
I am quite satisfied with this panini grill, and love my homemade paninis. I found that a sliced kaiser or hoagie roll works well, as well as thickly sliced Italian or sourdough bread. My favorite sandwich?: thickly sliced bread, olive tapenade, roasted red pepper slices and sliced fontina. Who said heaven isn't right here?

(More customer reviews)I finally finished my can of Reddiwhip and used this for the first time today. I mixed together 14oz of heavy cream and two tablespoons of powdered sugar and poured it in. Attached the cartridge, gave it a couple of shakes, removed the cartridge, and squeezed the handle and voila! wonderful whipped cream. I doubt I will save money over the ready made cans of whipped cream, but at least it won't be full of corn syrup. This whipped cream maker is very easy to use, and it looks beautiful.
