My family loves it when I pull out the cavatelli maker. The included basic recipes are very easy, and kids love to help with this. It's surprisingly easy to use, and (to me, just as important) easy to clean. I can make cavatelli for six people for just pennies using this handy little machine.

This machine is for those who are mad for cavatelli, those shell-like noodles with a ridged surface that captures and holds the flavors of a sauce. Cavatelli may be made from simple egg dough or one with ricotta cheese added. To use this cavatelliatore, feed a strip of pasta dough into the machine and turn the handle; the machine does the rest. BE AWARE - THIS MACHINE COMES WITH NO ADDED ATTACHMENTS. ALTHOUGH IT SAYS WITH ATTACHMENTS IT MEANS PER CSN COMPANY IN BOSTON THAT IT DOES NOT COME WITH BUT MEANS YOU CAN PURCHASE SEPARATELY ALL THE OTHER ATTACHMENTS THAT YOU CAN PURCHASE WITH COMPANIES. PS It does not come with the motor. They chose to use the ad not from the pasta maker box but from the motor box. I called the company and they said that the ad makes sense and is not misleading and that an older customer asked them to phrase it that way.

I got the opportunity to test this attachment out for KitchenAid and I learned a lot from the experience. This attachment makes pasta making relatively easy and is well built, (made in Italy). I found making pasta to be, while challenging at first, pretty straightforward. My first impression when I received the attachment how well built it is. The pasta press, (another name for this attachment), has six different plates for making pasta. (The plates are, Spaghetti, Rigatoni, Fusilli, Bucatini and two different sizes of Macaroni). The plates come apart for cleaning, (something I learned when cleaning it after one of my times making pasta). There is also a cleaning brush, multi-tool for pushing and taking apart the pasta press at the bottom, a case for the plates (stores the other five plates, while one plate is installed in the pasta press), and the instructions.
The Pasta Press is made of heavy duty plastic and comes apart easily for cleaning (except when you have pasta that you just made, and that's where the wrench comes in). The working parts consist of:
1). The Press Plate, which the pasta dough presses through with the help of the mixer,
2). The auger, which feeds the dough to the pasta plate, and is driven by the mixer hub. This attaches to the drive with a key at the end of the auger shaft.,
3). The cutter, which cuts the pasta off at the desired length.,
4). The housing, which houses the operating parts., and:
5). All the hub parts to drive the whole operation.
All the parts are of pretty high quality, though the pusher is not as good as I would like it to be. Sometimes the dough backs up out of the press and you have to push it back down. I would also like the pusher to be made out of wood, rather than plastic like it is now. I understand that KA needs to make money by cutting costs, but I would like to see less plastic used. The parts are pretty high quality now, though.
THE OPERATION:
The press operates by forcing pasta dough into different shapes, (it's an extruder, but KA calls it the pasta press, but they are the same thing.) The shapes are tube type for the most part, (except for the Fusilli), and there's not an option for flat pasta with this attachment. I would like to see different shapes other than truly tube shapes. I would like to see shells and other cool shapes for different dishes, though there seems not to be any plans for that now.
The press comes fully put together and ready to use, though, most likely, you'll want to change shapes to make the pasta you want. To do that, you'll need to unscrew the bottom part holding the press plate in place, and take the plate out of the bottom. This can be done pretty easily out of the box and likely doesn't need the multi tool. This can be rather difficult with dough in the threads, though, so the tool is necessary and takes care of it rather well and quickly. You'll need a lot of elbow grease, so this may not be for people with limited strength in their hands.
Attach the press to the hub and tighten down the screw, and you're good to go. The mixer has to be set to different speeds to get the pasta to extrude, though you'll want to go a little slower than the instructions recommend to keep up with the process.
Cleanup is pretty easy and the plates come apart with the tip of a knife. I find that running my plates through the dishwasher makes the process easier when you get the dough off the plate parts. put the plate back together and you're good to go.
In conclusion, I like this attachment for the most part, but there are some things that could be improved. I really like this attachment, but, like most things, can be better.

I have bought and tried just about all the Chinese Pasta Mixer-Extruders that are being sold today, including the Ronco disaster and the Pasta imPerfect (and its' 3 or 4 clones that have interchangable parts with the Pasta Perfect.) and have decided that you need to invest at least $200 to get a combination unit that has a ghost of a chance of performing decently.

I have had good luck with two different units: The somewhat pricey Kitchen-Aid pasta extruder attachment (which requires the ownership of a Kitchen-Aid mixer, and this cheap little Atlas manual pasta extruder. Both units require you make up the dough in advance. With the Kitchen-Aid you have the dough hook and all the other great equipment. With the Atlas, you can use a fork, flour, eggs, your hands and whatever else, to create your dough.
With the dies included, you can make spaghetti, macaroni, noodles, lasanga and cookies. Who cares about the 8 other dies that don't work very well in the other machines anyhow? It is a manual machine. Nothing to jam or burn out. Easy to clean. And it does its' thing quite well! This is the unit to get if you want do what pasta extruders do best. Roller type pasta makers also have their place, but you can easily afford this little angel and a roller machine as well! Obviously I love it!

I checked out several brands before deciding on this one. I followed the directions exactly, and the pasta came out perfect. it makes up to 3 pounds of pasta each time.That's a lot of pasta. But, you can freeze the leftover that you don't need right now. the noodles are not sticky and they cook fast. the fettucine cooked in 3 minutes after water boiled. I have no regrets.

I did a great deal of research on the internet before buying an automatic pasta maker. I couldn't spend a fortune, but I wanted the best quality machine I could afford. I read too many reports of broken plastic extrusion discs, motors that burned out, etc. I learned that the Simac, Delonghi and Lello products were all related (so the quality of the older Simac brand seemed to be carried on in the newer Delonghi and Lello brands). I liked their metal extrusion discs and the durability of them. I felt a 2 lb capacity was ideal. I bought this one.
I was not disappointed. I had read a great deal on the internet that the trickiest part is getting the dough consistency right. Most (if not all) of the negative reviews of all pasta machines center around this problem. When trying to decide which machine to buy, I do not recommend being influenced by reviews that focus entirely on this issue - that complaint is all about user error and has nothing to do with the quality or reliability of the machine. (Experienced makers of home made pasta need to understand that the dough will need to be a different consistency in this machine than when done the manual way.) I measured carefully and read the machine instructions very carefully (they bend over backwards to help you with this) and I didn't have any trouble getting pasta dough to extrude. I found that a 2lb capacity is more than I needed for a family of 3. I also felt that having metal extrusion discs is valuable in that when you trim the dough as it extrudes, you really run your knife against that metal a lot (in order to help get a clean cut). I can imagine a plastic disc would wear considerably faster under those circumstances. (You literally slice and slice hundreds of times for the smaller pastas - like elbows and such.)
I would highly recommend this machine. I was impressed by its quality and usefulness. You will not regret your purchase with this one.
