1. Use corn starch, not flour, to keep the pasta dough from clinging to the mold. I put corn starch in a powdered-sugar-type shaker/dredger, and I give the first sheet of dough a good sifting on one side. Then I flip that over so the cornstarched side is facing down, against the ravoli form. After I put the second sheet over the filling, I dust the top with more cornstarch before rolling -- that way it wont stick to the rolling pin either, and when I invert the mold over a parchment-lined cookie sheet, the raviloi won't stick to the parchement paper. Note that you want to avoid getting cornstarch BETWEEN the two layers of pasta, as it will inhibit their sealing together.
2. Get a small (#40 or a higher number) disher (a thumb- or squeeze-lever ice cream scoop) for putting filling on the pasta. It will save you tons of time and all your ravioli will come out the same fatness. An added bonus is that you can calculate in advance how many ravioli you will get out of a given amount of filling: a #40 disher gives you 40 scoops per quart.

I was quite pleased to see that this unit came with much more than advertised. It contains cutters for various types of pasta, along with attachments for different thickness of pasta, as well as a ravioli press! Not sure I would purchase for professional daily use - but this is certainly robust enough for occaisional personal use. I had no problems at all and it worked perhaps better than advertised.

I purchased a kitchen chef pasta set not understanding it did not contain a Ravioli maker. Had one before with Pasta Queen but it was gone. Looked at the kitchen aid price and decided to go manual to save money. Used it tonight and after I got the dough rolled out,#5, cut off the ends and used the cutter for correct width; we made Ravioli. Had not done pasta for many a year, now retired have time to play. Don't forget pot stickers e.g
Chinese Ravioli.

I got this pasta maker based on feedback from this and similar web sites. As always, the quality of the pasta depends on the quality of the dough - and that takes some practice. Once I had a good recipe and decent results rolling out by hand, the addition of this machine made life great!
Despite the jokes about Fiats and other Italian machinery - this machine is world class. It is heavy, solid and built to tight tolerances. You need to cut your pasta to fit and it's nice to have another set of hands, but once you get used to it the results are amazing!
I also got the ravioli attachment which is awesome. This machine will last forever if you care for it (do not immerse!) and makes a super fresh pasta dinner in less than an hour. My Sicilian mother (rest in peace) would be jealous!

I bought a used one and I am impressed with a quality product. Because of the reviewer who received an machine made in China I would be careful to determine the country or origin before purchasing.
This is a heavy, well made machine obviously made by someone with a passion for pasta. I would be surprised if it doesn't last me the rest of my life.
It came with a cutter for regular spaghetti and noodles. Additional cutters for ravioli, lasagna and other pasta types are available.

I purchased this item to go with the CucinaPro 178 Fresh Pasta Set & I am glad I did. The pasta set is great on its own, but add this motor & you're really in business. It eliminates the constantly falling crank handle which you will see mentioned often in the reviews for a manual pasta set or maker. It also frees up your cranking hand so that you can use both hands to handle your dough which is necessary when the dough sheets get long.
The cord is sufficiently long & heavy. The motor has plenty of power to roll out dough. Even if you are not going to use a cutting attachment, put one on your pasta machine anyway. The motor attached to the pasta machine only makes the whole thing off balance & it will fall over. So slide on an attachment to balance it back out. The attachment also does a great job of serving as a guide for feeding your dough into the machine which again is handy when the dough sheets get long.
I gave this a 4-star rating because while the motor is great, the included instructions are absolutely horrible, probably the worst instructions I have ever seen, with the exception of an item my husband once bought where the item had over 400 parts & instructions in Chinese. There are no pictures showing how to orient the bracket for it to properly hold the motor. Since CucinaPro also makes the Imperia pasta machine, which is just a costlier version of the 178/177 models, I got on their website & downloaded the instructions for the Imperia which included a couple of pictures. After that I was in business:-D The original instructions also state that the pulse button is to be used when attaching the motor to the ravioli attachment. Forget it...the ravioli attachment is narrower than the pasta machine & there is no way to attach the motor to it. As I do not own the more expensive Imperia machine, I cannot tell you if it will attach to that ravioli maker or not. On the 178 pasta set that I have it does not.
In conclusion, I really like this little motor & feel that it was worth the investment. Another viewer felt that the price was high now. But, price that Atlas, Imperia & Roma brand machines with motors & with the attachments included. The 178 pasta set (machine & 5 attachments) with this motor will run you around $120. With the other brands the motor alone will run you that & the machine with 5 attachments will run you another $190...that amounts to $310 to get what I got for $120, which works great...so it really that expensive?

I didn't bother coming here first because Amazon won't ship this attachment to Australia.
Anyway, I finally got the thing the other day, after a lot of trials and tribulations, from a local store that was able to get it for me. And after all the effort and waiting to get it, what a huge letdown. I honestly expected more from KitchenAid.
I have not used the grinder to grind - I didn't need a food grinder. I only purchased it to make pasta, and the plates are made to be used with the food grinder only.
I have worked as a professional cook, have successfully made hundreds or maybe even thousands of kilos of from-scratch fresh pasta in my life, and have never come across such a reputable manufacturer offering such a poorly designed product as this. Shame on you, KitchenAid.
For years, I've used my little Italian hand-cranked pasta maker, and thought I'd try this one because it would allow me to make tubular macaroni. I also thought the extrusion process would be easier than cranking. Not true.
As others have said, getting the consistency just-so for extrusion is tricky. A couple of batches ended up in the rubbish.
The object is to continue to drop walnut-sized pieces of dough into the tube, while also catching the pasta as it comes out of the machine. Because it tends to get warm and stick together in one huge blob, people on the KitchenAid boards have suggested sprinkling the emerging pasta with flour. And for this, you need three hands. Those of us lucky enough to have been born with three arms may find it a breeze, but the rest of us will struggle. And this is not even to mention the additional mess (and wastage) of the sprinkled flour! By the time I was finished (or rather, surrendered), the place looked like an explosion in a flour mill!).
The first disk I started with was the noodle disk, and then went to the lasagne disk.
I can't see how the lasagne disk can be used for ravioli, as it has a "join" in tbe middle of the dough (which can be seen as a transparent streak. This is because the dough is actully extruded from this disk in two pieces which join when they are dropping from the disk). I can't see that pasta holding up to being filled and boiled.
The instruction booklet (it was the European version) was a letdown - only one recipe - "Basic Egg Noodle dough". The recipe in English was in the "home style" volume measurement of cups, whereas the European measurements were in weight (used by professional cooks, because it's more precise). I used the European ones, except that was difficult to translate the names of the ingredients (KA, please give us weight recipes along with the volume measurement ones, in English). I couldn't believe that the KA website doesn't have any recipes! Do they really want to sell these things?
The instructions could have been clearer. I expected to drop a walnut-sized piece of dough into the machine, and have at least something come out. But the first piece is for the 'screw'. It takes until the second piece and beyond, before you start seeing pasta. They could've mentioned that, as I thought I was doing something wrong.
I do not recommend spending money on this pasta maker (the food grinder might be good. I haven't tried it). The only thing this purportedly does that my hand-cranked one doesn't is tubular macaroni, and after seeing how it handled simple fettucine, I have my doubts about it (also, the instructions said that macaroni could not be dried and kept, but had to be used within 4 hours of making, which may not always be practical). I've decided that if I need macaroni, I'll buy it! The rest will be more than adequately handled by my dependable Atlas machine (for which I now intend to get the add-on motor).
Now, I think I'll go to ebay and list this attachment, since I have no need for the grinder part, and the pasta function is pretty dismal.

I purchased this item because the original roller attachment from the three-piece set I received over three years ago finally broke. Please bear in mind that I make more pasta than 99% of those who will buy this machine - usually FOUR dozens eggs worth per session (every month or so) - I did not hesitate to buy another.
It works perfectly! It also seems that they have made some changes since the last model. The copper scraper-plates where the dough is extracted have been changed to plastic (this actually is a GOOD thing, as little bits of copper will not get into your noodles if they break off). Also I have heard that they changed the gears from plastic to metal (another plus for durability if it is true).
My last model was on its way out for a LONG time (you could hear it), and when I used this one I had realized how quiet it used to be when working!

I was looking forward to this attachment making the process of pasta making a lot easier, rather than using the hand crank models. I am very disappointed in this attachment. I used the plain pasta recipe that came along with the attachment. You have to spend a lot of time breaking the dough into small enough pieces (the size of a grape) to fit into the attachment. You would hope that the small enough pieces would go thru easily, but they don't. You have to push them in somewhat. What is worse is that you can only put a couple pieces at a time. Too many and the attachment doesn't work well at all. Had to keep pulling the pasta out of it. The finished pasta pieces that came out of the attachment all stuck together. Lot of time pulling pasta apart. Cleanup is horrible. I spent more time trying to pick pasta out of every little nook and cranny than I did making the pasta. Actually ended up throwing the pasta out because it just looked awful. Going to try again but I have a feeling I will be pulling my old stainless steel hand crank model back out.

The motor lasted less than 2 minutes from the time we got it out of the box, and we didn't even get a chance to try to make pasta in it. We ran it empty to test it out. Glad we didn't try to make pasta in it! What a pain. Now we have to return it and hope we get a full refund. More to follow if Amazon gives us any trouble with that!

I got the opportunity to test this attachment out for KitchenAid and I learned a lot from the experience. This attachment makes pasta making relatively easy and is well built, (made in Italy). I found making pasta to be, while challenging at first, pretty straightforward. My first impression when I received the attachment how well built it is. The pasta press, (another name for this attachment), has six different plates for making pasta. (The plates are, Spaghetti, Rigatoni, Fusilli, Bucatini and two different sizes of Macaroni). The plates come apart for cleaning, (something I learned when cleaning it after one of my times making pasta). There is also a cleaning brush, multi-tool for pushing and taking apart the pasta press at the bottom, a case for the plates (stores the other five plates, while one plate is installed in the pasta press), and the instructions.
The Pasta Press is made of heavy duty plastic and comes apart easily for cleaning (except when you have pasta that you just made, and that's where the wrench comes in). The working parts consist of:
1). The Press Plate, which the pasta dough presses through with the help of the mixer,
2). The auger, which feeds the dough to the pasta plate, and is driven by the mixer hub. This attaches to the drive with a key at the end of the auger shaft.,
3). The cutter, which cuts the pasta off at the desired length.,
4). The housing, which houses the operating parts., and:
5). All the hub parts to drive the whole operation.
All the parts are of pretty high quality, though the pusher is not as good as I would like it to be. Sometimes the dough backs up out of the press and you have to push it back down. I would also like the pusher to be made out of wood, rather than plastic like it is now. I understand that KA needs to make money by cutting costs, but I would like to see less plastic used. The parts are pretty high quality now, though.
THE OPERATION:
The press operates by forcing pasta dough into different shapes, (it's an extruder, but KA calls it the pasta press, but they are the same thing.) The shapes are tube type for the most part, (except for the Fusilli), and there's not an option for flat pasta with this attachment. I would like to see different shapes other than truly tube shapes. I would like to see shells and other cool shapes for different dishes, though there seems not to be any plans for that now.
The press comes fully put together and ready to use, though, most likely, you'll want to change shapes to make the pasta you want. To do that, you'll need to unscrew the bottom part holding the press plate in place, and take the plate out of the bottom. This can be done pretty easily out of the box and likely doesn't need the multi tool. This can be rather difficult with dough in the threads, though, so the tool is necessary and takes care of it rather well and quickly. You'll need a lot of elbow grease, so this may not be for people with limited strength in their hands.
Attach the press to the hub and tighten down the screw, and you're good to go. The mixer has to be set to different speeds to get the pasta to extrude, though you'll want to go a little slower than the instructions recommend to keep up with the process.
Cleanup is pretty easy and the plates come apart with the tip of a knife. I find that running my plates through the dishwasher makes the process easier when you get the dough off the plate parts. put the plate back together and you're good to go.
In conclusion, I like this attachment for the most part, but there are some things that could be improved. I really like this attachment, but, like most things, can be better.

I agree with the other negative review below, this attachment is useless for making ravioli. Firstly, the ravioli are way too small (IMHO) and it is very difficult to gauge the amount of filling to put into the machine, as it depends on the consistency of the mixture. It's not possible to roll the pasta thin enough for a good ravioli either, as if it's too thin the filling just squirts right out. It is also impossible to clean when a wet filling gets inside the machine (which it does) if you cannot use water to wash it (which it says you shouldn't as it may rust). I recommend the old fashioned way of making ravioli, it's actually a lot easier and you have more control over the size and shape of the finished product. I actually like the Imperia Pasta machine very much, but this was a very disappointing attachment.

I bought the 220 Electric from[...] about a month ago. [The postage from Amazon would have near doubled the price - its a heavy solidly built machine.]
Since then, I have made pasta about three times a week. The machine is easy to use, easy to clean. How easy? Well I'm making pasta in the evening after work. In a session lasting about 100 minutes I can make three batches of 10 eggs/1kg flour. That gives me about 55 half litre (1 pint)tubs of cooked egg pasta in, say an hour and a half. No way I could do that with a manual machine.
When I think how I used to battle with the manual machine clamped to a table - I musta been nuts! Its expensive, ja, but hey , it is so-o worth it.
Tip: Don't buy a fancy wooden pasta drying rack. Use a cheap Mic stand - the boom type. Why? The mic stand folds up into the broom closet in 5 seconds. Rock and Roll!
