Beggars can't be choosers, and that seems to be true for takoyaki in the US. The delightful Osaka treat is rare enough even at Japanese restaurants, and the necessary implements for making it at home are even more so.
The absolute best set up is a round takoyaki pan, either on a gas or electric portable grill. Much of the fun of takoyaki comes from everyone sitting around the table and cooking together, putting in your favorite ingredients and popping the little balls out then eating them hot and fresh. That is how it is done in Japan, and home-cooking takoyaki isn't meant to be the province of a lone cook standing over a stove while everyone waits patiently for the food. It is a communal experience.
However, true takoyaki cookers are not readily available, and this pan is better than nothing. It doesn't take much, just a pan with round indents in it heavy enough to rest on the range while the balls are flipped over using long toothpicks. It isn't really designed to work with electric ranges, as they are pretty rare in Japan, but it does the trick. I don't recommend using the included steel pick, as it will scratch your pan and conduct heat while doing the flipping.

Hi. I read the previous review and just wanted to put in a correction and a FYI so people don't think these cast iron cooking utensils are defective. I cook alot with cast iron and have bought new cast iron cookware from the US and China. When a cast iron cooking vessel is brand new and hasn't been "seasoned" by the manufacturer (like Lodge does for some of their skillets and such), it is covered with a thin film of machine oil to prevent rust and corrosion in transit. This is what needs to be washed off before use. Non-seasoned cast iron is a very gray color- indeed, almost looking painted gray if you're expecting it to look black. It will not develop the black patina until you start cooking with it. It is essentially baked on oil that turns the iron black. The best way is to season your new pan is to coat the whole (dry) pan inside and out with vegetable oil and put it in the oven to bake. A very thorough explanation of the seasoning process is given at the Lodge Manufacturing website: www.lodgemfg.com When you're done cooking with your cast iron, scrub it out with hot water only, and then put it on the stove-top to dry. Re-apply a bit of oil as needed. Iron rusts without this protection to moisture from washing or in the air. Cast iron does take a bit of maintenance, but is a superior and very safe cooking surface. The Norprp cast iron panini press is a very good and useful gadget. I had really gotten tired of using a filled-up tea kettle as the top weight on my grilled cheese sandwiches. The press has just the right amount of weight, covers a wide area on my 11-inch calphalon grill pan, and is easy to clean (just a quick wipe-and-dry). The reason I gave it four instead of five stars is that the ridges on the underside are pretty useless. You can't really heat this thing up enough on the gas burner to use it to simultaneously grill the top-side of your sandwich as the product lit promises. It never gets hot enough and loses heat as soon as it comes off the flame. So for me it's just a fancy weight -- but that's what I bought it for.

I enjoy using this to make "tortillas" with the dinner roll dough.
Problems:
1. It is HUGE. Not recommended if you have a small kitchen
2. The cooking pan on top is small and it doesn't come out. It is very difficult to clean after cooking.
3. The tortilla press has to be attended at all times. You have to press it all the time. It makes an annoying noise while pressing.

Ingrediants wheat flour : 200g bicarbonate of soda : half teaspoonful salt : one third teaspoonful sugar : two tablespoonful water : proper quantity(Please select by your sense of taste) 1. stir all Ingrediants thoroughly 2. heat the Taiyaki-ki with both sides.(But don't heat to intense heat) 3. spread oil with Taiyaki-ki and pour mixed ingrediants into Taiyaki-ki. 4. put Azuki beanes on mixed ingrediants(Taiyaki-ki) 5. pour mixed ingrediants again on Azuki.(but a small quantity) 6. close Taiyaki-ki and heat both sides.(you turn Taiyaki-ki over at intervals) 7.. finish and enjoy the Taiyaki.

I bought this to make rotis and am very happy with the purchase. The rotis come out great, and they puff up really well. The first few weeks the rotis used to dry up fast, but after using the roti maker for a couple of weeks, the quality of rotis improved. I usually keep the temperature control in the high position. Probably the lower positions would be useful only to reheat.
Update: I would like to change my rating to 1 star. After less than a year o using it, the roti maker just stopped working. It didn't heat up at all. I tried calling their warranty service and they kept hanging up on me. Bad customer service. Even when I asked to speak to the manager, they didn't respond at all. Then the place I bought it from offered to replace it if I bore the shipping cost. I used the new one for another 7-8 months and that one suddenly stopped heating up too. Don't buy this product. It doesn't work or more than 7-8 months and although it has a one year warranty, they will not replace it.
Additional Update: March 2010. I got another one of these because the retailer said they have fixed the issue with the heating element. But all they did was reduce the maximum temperature it heats up to, and now it may not fail, but the Rotis now don't get cooked well at all. It feels uncooked and tastes awful.

I bought one of these at bed bath and beyond, and I really like it. Our first round of pancakes we did with one of the recipes that came in the booklet. I had put the heat on the stove a little too high, so they were getting a little too dark for our taste, so I turned the stove down to low, and things rolled along nicely from there. It takes a little practice to get the hang of flipping them, but it's really not that hard. I do suggest non stick spray as that will make them flip easier. I know the other review said that hers started to rust right away, and if you don't keep it oiled it will, as ours started to a little as well. We just wiped it dry and put a light coating of oil on it and it's been fine ever since. We really enjoy it and have tried several of the recipes that came with it. The little extras that come with it aren't too exciting, the brush sort of disenegrated and the injector is too small to really do anything with it, but the handle cover is nice as well as the sugar shaker.

I bought 2 of these. Based on the potential product quality, I would give it 5 stars. These can make great waffles (nonbelgian - i.e. thin), crisp on the outside, tender in the center, and light and airy. It's a revelation in fact, if you are used to the typical doughy waffle. I like these much better the what the waring pro, nonstick, flip, automatic beep, etc. In addition, the cycle time can be quite fast, provided you preheat the irons sufficiently and keep a high enough temperature. I can average 1 waffle a minute.
However, I took off a star because of the following caveats:
1) You must know how to season cast iron, otherwise the waffles will stick. It would be great if they could preseason this, like lodge logic. To season, first i put the irons in boiling water to take off the wax coating, then soaped and washed. I decided to season this on the stove top (make sure you have a good hood & vent). I preheated the irons, then brushed a raw chunk of pork fat on the surfaces several times and continued heating until the seasoning looked hard and black and no longer sticky. It took about 30 minutes (using 4 burners as I had 4 halves or two whole wafflers) and it will give off a lot of smoke. I decided to do this on the stove top because i have more control vs the oven.
2) The handles get hot. So, you need a mitt to handle it. I find a thin mitt easier to use than a thick one. It's easier to lift just the top half with a thin mitt. And you have to be somewhat careful as the halves can disengage while you are filling and removing the waffles. Having said that, I got the hang of it pretty quickly. I would not let my kids use it though. They also sell these with wooden handles. It would probably be easier.
3) You have to use enough heat. You have to preheat each side till it starts to smoke. I use medium to medium high heat on a gas burner. Do not use high heat to preheat as you can burn off the seasoning. By the way, i don't know if this will work on an electric burner. And you have to brush or spray some oil or butter. I brush lightly a mix of oil and butter. I find i only have to do this every other waffle, as the waffle mix does have some butter in it.
4) I don't wash the waffle surfaces, I just brush and wipe after cooking.
HOWEVER, in spite of all that, I really like these and the my kids rate the waffles a 10, especially the cheesy waffles.
I use a yeasted waffle batter that I make the night before. It includes, flour, buttermilk, eggs, and a bit of sugar and salt and some melted butter. I stir in a pinch of baking soda for extra lift prior to baking. You can put vanilla extract or grated cheese. I top with either real maple syrup, dulce sauce, or whipped cream and chopped fruits.
