I purchased this a few weeks ago, and have only used it once. At the same time, I found and purchased the Ursula Tartmaster from Kitchen Supply in Illinois. I recently used both to make ravioli.

The process is simple:
1. make a sheet of dough,
2. spoon filling onto the dough,
3. either fold the dough over the top of the filling, or place a second sheet of dough on top of the filling.
4. position ravioli maker, press spring loaded crimper on the top, and the crimping edge depresses and will seal the two layers of dough with a crimp.
5. release crimper and press down on press, the outer housing then cuts the sealed ravioli out of the sheet of dough. Lift finished ravioli and cook.
The antique gadgets ravioli/tart maker did those things adequately, but not great. I made about 6 ravioli with this press and about 20 with the tartmaster.
Pros: does job as advertised.
Cons: 1. with minimal pressure both the bell-shaped housing of the crimper and the stem to depress the crimper BENT! After 6 ravioli! My husband noticed it when inspecting the device as he came to investigate my operation. I was using normal pressure. My husband easily bent the unit straight by hand. Does not bode well for longevity.
2. the crimp did not seem sufficient,the crimping teeth quite shallow and smooth; having said that, it must have been adequate, since none of my ravioli came apart in the boil. The crimp is far cleaner and better defined with the ursula tartmaster, which has more square and deeper teeth.
The feel of the tartmaster was much more stable, I naturally gravitated to using it in preference to the antique gadgets device. The quality and ease with which the tartmaster made ravioli was far superior, and it is constructed with a durable frame on the crimper which should withstand decades of regular use. The tartmaster is more expensive, I paid $10 locally at a specialty shop for mine. It is also more difficult to find, since kitchen supply is wholesale only. Pampered chef originally collaborated with then stole Ursula Kaiser's tartmaster design and manufactures something similar with their name on it. There is an ongoing court battle about this. I had stopped buying pampered chef products several years ago do to their high prices. The quality of their things is good, but not for what they charge. I also have ethical difficulty supporting pyramid schemes. Now that I have learned that pampered chef will steal peoples ideas (Ursula's is evidently not the first time pampered chef has done this) I feel even less compelled to support pampered chef. I do not know what the pampered chef device is like, though it may be easier to acquire than Ursula's tartmaster.
Summary: the antique gadgets device will do the job, but better things are out there.

My family loves Pastaciotta's they are sweet Italian cookie pies made with ricotta or custard. This kitchen tool makes them cute & fun. We even made a PBJ with it too!!
AND if you have grandchildren it is a wonderful experience to share making anything with this little crimper.

I can't rate this dumpling press highly enough. It is superb quality 18/10 stainless steel. The one star rating left by another reviewer is unwarranted and unnecessarily downgrades a high quality product because the size was unsuitable for the buyer's purpose. The item should simply have been returned before it was used. In fairness to that reviewer, however, the problem stems from the fact that the size wasn't published previously, so that reviewer had no way of knowing if the size was appropriate. The outside diameter is 4-3/4", the interior diameter (space for the filling) is 3-3/4", meaning the pressed seam will be 1/2" thick. When the dough is pressed together, the folded dumpling is not quite 2-1/2" wide and 4-3/4" long. Furthermore, the item is advertised on the box as "Ravioli-Former". It just fails to mention that they're going to be huge raviolis.
So while this press would be great for empanadas, spinach pies, desert-filled pies, small calzones, or even half-moon shaped samosas. I'm not sure that I could recommend it for raviolis, pierogies, gyoza, or pot-stickers, because the dumpling will be rather large once it has been boiled/steamed (unless you're okay with that). If you're looking for a larger dumpling, however, you can't go wrong with this and I can't recommend it highly enough. As a bonus, when the press is fully open, the base serves as a dough cutter to make custom-sized pieces of dough for this press. Can't beat it.

I've been happy with many other KitchenAid products, but this one is pure junk. The pasta roller attachment that KitchenAid also offers is great, but the width of it is so close to the size of this ravioli press, that the edges of the ravioli barely have enough dough to seal - and many of them pop open.
It's worth noting that although this does in fact attach to a standing mixer, it does not use the mixer's motor. You have to manually turn the crank with your hand.
I returned this piece of junk, and bought the VillaWare V5500 10-Square Ravioli Maker for $18. Save yourself some money and do the same.

I recently had gotten a Villaware Pasta set for my birthday. One of the main reasons was the ravioli press. What a disaster that was. then I thought hmm, I'll try this. what a delight. I made up about 130 ravioli yesterday. It works great. I would like to mention to make sure you liberally flour it before laying on the dough so they pop out quick. It took for a few roll outs to discover this. I highly recommend this product, it is a gem.
